Opa's Smoked Meats

You’ve got to check out Opa’s Smoked Meats! This place has seriously wonderful smoked meats, sausages and more, is a real favorite in Fredericksburg. Their story goes all the way back to 1947, when they started as a little local smokehouse. Fast forward three generations, and they’re still making some of the best smoked meats you’ll ever taste, all with those same authentic German recipes that put them on the map.

When Rhonda and I moved into Walnut Canyon Cabins, we didn’t know much about running a guest house versus a bed and breakfast—it was a bit of a learning curve! One thing we did know, though, was that we wanted to support local businesses. More importantly, offer our guests food that’s both delicious and easy to prepare. That is where OPA’s comes in!

Walking into their shop on South Washington Street was like hitting the jackpot. The first thing we tried was their pepper-crusted smoked Canadian bacon, and it’s amazing! They take a pork loin, think boneless pork chop, season it to perfection, and smoke it until it’s juicy and tender. It’s quick to heat up, super lean, and works for any meal. I like mine warmed up, Rhonda loves it cold, straight from the fridge.

Opa’s does so much more than just Canadian Bacon, though. They’ve been perfecting their craft for over 65 years, and their store is packed with goodies. You can grab sandwiches to take out to Enchanted Rock for a picnic or pick up some of their incredible sausages to cook back at your cabin for dinner. On the dining adventure, you will not be disappointed with their newer creations, like Hatch Green Chile sausage or Chicken Sausage with Poblano and Monterey Jack cheese. They’re always finding ways to mix tradition with something fresh and exciting.

The retail store has been recently remodeled and looks fantastic. Along with their smoked meats, they’ve got authentic German food items and all sorts of local treats.
